FroYo!

Food Network has recently started publishing their own magazine and it is fabulous!! I have LOVED the past few issues we have picked up at the store.

This issue had a knock off recipe of Pinkberry yogurt. Huntsville just recently got a frozen yogurt place I love so I thought I'd try the recipe and it was AMAZING!

THE RECIPE...
  • 2 cups plain whole-milk yogurt
  • 2 cups plain nonfat or reduced-fat Greek yogurt
  • 1/2 cup superfine sugar
  • 3 tablespoons light corn syrup
  • Fresh fruit or other toppings, for garnish

Directions

Whisk both yogurts, the sugar and corn syrup in a bowl until combined. Pour into an ice cream maker and freeze according to the manufacturer's instructions.

For a soft consistency, serve right out of the ice cream maker. For a firmer texture, transfer the frozen yogurt to a covered container and freeze for up to 2 hours. Serve with assorted toppings.

(Recommendations from the Abernathy kitchen)
We used light yogurt and light Greek yogurt and it still turned out fine.
Next time we are cutting the amount of sugar in half and see if it still works.

Sorry for the lack of pictures recently!

Peaches and Berries

This weekend we used some of our produce from the farm (co-op) for a great cobbler. It was a peach and blackberry cobbler, but I'm sure you can use whatever you have!

The lime/lemon in the fruit mix brings out the flavor! We cut some of the sugar from the dough and it was still plenty sweet!

Happy summer!

Scrapped On

Thanks Caylen for tagging me....something I've been dying to do. So what do you not know about me?

I have an ice cream addiction, my favorite being Java Chip.
I move the weekend of August 15 and don't really know my roommates, but I'm really excited.
I just got an i-phone. I feel cool now!
My favorite movie is the Bourne Series. Other than that I like happy, feel good movies.
In October, Lord willing, I'm making a trip to Arizona.
I'm currently reading through the Old Testament (in preparation for school).
I would love to have my PhD one day.
Currently my favorite dessert is an amazing Chocolate/PB combo...of course for the summer I will gladly take homemade ice cream any day!
I am dying for a beach trip
And I love my friends enough to not pass this on!

Firey 4th

Since last Monday I have had family visiting as they trek cross country to their new home in Chapel Hill.
All week long we have eaten amazingly well! LOTS and LOTS of baked goods and really good meat.

For the 4th of July this is what Doug and Daniel did with their Roman Candles. I apologize that the video is a little grainy.

We sat outside two nights and watched for about an hour as they played Harry Potter and shot at each other.

Sadly, Doug lost the battle. He walked away with a burned eyelid, and 2 burned patches of hair.
Not to worry after the burned eyelid they guys did put on eye protection.

Oh and if you missed it in this video Daniel gets nailed in the forehead and the firework shoots straight up into the air to rebound off.

Hope your 4th was as exciting as ours!

Party

On Saturday the guys hosted a Luau for all the ladies. The truly went "all out" in throwing the party. The decorations, food, and games were all amazing. It was a really great night of food and fellowship!

Marilynn and Jennifer are in to the competition of carving their Spam into something. The guys even had prizes for the winners.

One of my favorites!
Just a few of the girls from the party and a peek at how BIG Phillip's back yard is!
The amazing spread the guys put together for us. Tim did a great job smoking the pork and the kabobs were super tasty!

It really was a great night for everyone!
