Happy Birthdy Doug


Sunday was Doug's birthday. We did birthday celebration Friday with one of his college buddies and the whole family. We had Doug at home for almost 2 weeks over the past month which has been nice. Happy late birthday post Doug!

Graduated!

This weekend Daniel graduated from Madison Academy! We had a great celebration for him on Sunday afternoon with all the bacon a man could desire. I don't think I have ever seen people swarm a table at one of our parties like they did at this one.Foods: Candied bacon, bacon wrapped club crackers, bacon wrapped jalapenos, and bacon dip. The rest was all normal food. But that combined was approximately 12 pounds of bacon!
Thanks to Alexa and Bethany we made 100's of the cute graduation caps for people to eat. Thanks to all the family for help-Ware, Martin, Harrison-we couldn't have done it without you.
D&C, we had a beautiful picture of what our lives could all be like if we can end up in the same city together....quite hysterical if I do say so, maybe even scary!

First Pick up!

We picked up our first week of fruits and veggies last night. We were all excited to see what we would be getting and mom slightly nervous it would all be greens she wouldn't eat!

We got FABULOUS strawberries, sugar snap peas, asparagus, broccoli, chard, and green onion. Can't wait to cook all of it and try out some new recipes!

Weekend Adventures

Another good weekend for the books.
Saturday afternoon Jenna and I did another bike ride and Barry came along. One week I will document this! We did the greenway trail from Mt. Gap to Ditto Landing (apprx 8-10 miles round trip). We got caught in a storm and rode the whole way back in the rain! I was soaked to the core but we had a blast!


Saturday night I went with the fam to a Viper's arena football game. I've never been, and I love football, but I didn't really love this. I was ready to go by halftime. Alas, we stayed the whole time while the guys bonded and mom and I tried to enjoy ourselves.
Let's just say the Viper's pull a different crowd out to their games. I'm just happy we had free tickets and I got to go.

Sunday, I attempted another new recipe-souffles! These are the leftover ones after they already fell. I used a Grand Marnier recipe from Epicurious.com. A lot of work if you don't have a Kitchen Aid to help you and a WHOLE LOT of egg! Pretty tasty recipe I think the next venture will be Creme Brulee.

Eating my fruits & veggies

Super excited about the next few weeks for many reasons. One of those being we joined a CSA or Community Supported Agriculture program. Doe Run Farm of TN will be delivering us a 1/2 bushel of fruits and veggies every week! Looks like we will be eating healthy this summer. I'm excited to learn how to cook some of the veggies that I have no idea how to use.

Edible Arrangement??

So yesterday at work I got an Edible Arrangement from the boss. You know one of those big fruit basket things. Mine pretty much looked like this. Just without the chocolate covered fruit. TOTAL surprise. Most random note on there. After taking the basket apart I brought it back this morning for the guys to happily devour.(Sorry couldn't get the pics to download this morning)

5th day of May

Yesterday I celebrated Cinco de Mayo with a free t-shirt and margarita (not free) from Little Rosie's.
After that it was off to Stephen's house for a party with friends. I made a new recipe of Enchiladas Verde. Super tasty for a made up/combining multiple recipes attempt! I will definitely be making them again.

RECIPE:

Boil chicken with onion, cumin, paprika, salt, pepper, crushed red pepper.
Take out drain liquid and save some. Save the onions and using the same pot put in a can of diced green chilies and some salsa verde. Add some more cumin and if it needs heat some crushed red pepper. Add a garlic clove and at the end some fresh cilantro.
Throw the shredded chicken back in and mix it up. Add more salsa if it needs more liquid.

Roll up in tortillas with some cheese. Bake for 20-30 minutes covered. For the last 5-10 minutes mix some salsa verde and sour cream together to put over the top and add some cheese for good measure!
